Because it will drive new recipes, formulations, equipment, and overall industry movement to meet demands. It's a good and necessary development, and we as suppliers to the industry must react with products and technologies that make processing, recipe management, and equipment automation easier, from purchasing (can anyone say cloud/SaaS?) to more complete solutions (OEE, integrated batch management, workflow, etc.).
